Surprisingly good

Had the first taste from the first time roasting! It was surprisingly good. Left a mellow taste in my mouth for a good time after drinking. Will be doing a second batch today!

Consistent Excellence

The Phoenix blend never fails to deliver for our taste preferences. I love experimenting with different beans and roasts but I always have Phoenix in the pantry as our fall back. I know exactly what times and temps for the roast and it always produces the rich, chocolatey style shots that we love for our short flat whites and double espressos. Hats off to whoever blends the Phoenix for its consistency and high quality.

First try of Phoenix blend

I bought 4 kg of the green beans Phoenix blend recently. I've been told in the past that it's not ideal to roast different beans together, but the Phoenix blend roasted nicely. I was careful in my roasting method, which resulted in a full city roast that tastes great. I only roast in small batches with my Cafe Gene home roaster. My method is to do a double roast. First, hydrate the beans for 5 minutes at 160C, cool down under a fan for 15 minutes. Preheat the drum at 200Cfor 5 minutes and replace the beans. Roast for 5 minutes at 200C then ramp up to 240C for 11 minutes. Back off to 210C for 4 minutes and empty the drum to a tray under a fan. Great full city roast at the start of 2nd crack. I rest the beans for several days before extracting my espresso.
